Garlic Butter Potatoes

  • 3 lb Potatoes - peeled and quartered
  • 1/4 cup butter
  • 3 cloves minced garlic
  • 3 tablespoons olive oil
  • 2 tablespoons dried or fresh parsley
  • 1/2 teaspoon Flour
  • Salt and pepper (lemon pepper is nice) to taste

Boil potatoes just until tender. The edges of the potato pieces will start to round and this is a sign that they are almost done or done, drain. Saute minced garlic in butter and olive oil, on medium low, until fragrant. Whisk in flour and cook a minute or so. Remove from heat and stir in parsley, salt and pepper. Toss potatoes with butter mixture.

Optional Additions:

  • Crumbled bacon
  • Chopped leftover ham
  • Add some chopped green onions with the garlic - this will make the dish look even prettier.
  • Squirt of lemon juice, or juice of fresh lemon. This will give the potatoes a little bite.
  • A little sour cream, stirred in
  • A little grated parmesan cheese stirred in. This may make the potatoes a little stiff and you may have to add some more melted butter.
