Delicious Garlic Butter Potatoes, the ultimate comfort food. This recipe is perfect on a any night, an economical side dish that is fast and easy to throw together. Almost everything in this recipe can probably be found in your pantry.
Garlic Butter Potatoes
- 3 lb Potatoes - peeled and quartered
- 1/4 cup butter
- 3 cloves minced garlic
- 3 tablespoons olive oil
- 2 tablespoons dried or fresh parsley
- 1/2 teaspoon Flour
- Salt and pepper (lemon pepper is nice) to taste
Boil potatoes just until tender. The edges of the potato pieces will start to round and this is a sign that they are almost done or done, drain. Saute minced garlic in butter and olive oil, on medium low, until fragrant. Whisk in flour and cook a minute or so. Remove from heat and stir in parsley, salt and pepper. Toss potatoes with butter mixture.
Optional Additions:
- Crumbled bacon
- Chopped leftover ham
- Add some chopped green onions with the garlic - this will make the dish look even prettier.
- Squirt of lemon juice, or juice of fresh lemon. This will give the potatoes a little bite.
- A little sour cream, stirred in
- A little grated parmesan cheese stirred in. This may make the potatoes a little stiff and you may have to add some more melted butter.
